Science of Food by Dr. Jena Hwang, IHMC

The fall 2016 Science Saturdays started in September with “The Science of Food”. This fun, hands-on chemistry topic was led by Dr. Jena Hwang, Research Scientist at IHMC. Students did an experiment related to the chemical reaction inherent in yeast to understand what causes bread to rise. They compared how honey, egg, mustard, and vinegar interact with oil and water as emulsifiers and then they made butter, as an example of a de-emulsification process. The generosity of the season sponsors makes it possible for all students to participate in these events free of charge.
